Blender Pancakes
We love these pancakes. They are perfect for making a big batch. I usually don’t like reheated pancakes but these reheat perfectly and I even eat them cold with a swipe of nutella, so good! They are quick, easy and all the kids love them. Win, win, win!
Blender Pancakes:
Makes 24 Pancakes
4 bananas, ripe-overripe
4 tsp. vanilla
4 eggs
2 2/3 cups non-dairy milk or regular
4 cups old fashioned oats (these are our favorites)
4 Tbsp melted vegan butter (we use miyokos) or avocado oil
1 Tbsp ground cinnamon
1 tsp fine sea salt
2 Tbsp baking powder
2 scoops vanilla protein powder (we use Active Stacks)
Add everything to the blender in the order listed and blend away until the batter is smooth.
Heat pan over low to med heat and melt some butter in the pan.
Ladle on the pancake batter and flip when it starts getting little air bubbles on the top.
Top with your favorite fruit or topping or with a little Nutella or Justin’s schmear and enjoy!
